While its counterpart seeks lightness, this lot explores the depth of fruit concentration through extended, controlled fermentation. The processing method is engineered to increase the complexity of volatile compounds, locking in heaviers ugars and savory precursors that produce a tactile, umami-rich body. It avoids the chaotic notes often found in experimental naturals, offering instead a disciplined intensity.

The raw material originates from First Valley Coffee, a sustainable estate cultivated by Mr. Aek Suwanno (known locally as the "Mad Scientist") in Maeton Luang Village. ORGANUM visited the plantation personally to evaluate the crop. We conducted the transaction and purchased the beans directly from the grower, strictly without the involvement of any commercial intermediaries.
