We met through music and started roasting coffee for friends and family. The response became so consistently enthusiastic that turning it into a real project felt organic. Our official debut was Warsaw Coffee Festival 2026.

ORGANUM is a small-batch experimental roastery from Warsaw, Poland run by two sourcers who highly value coffee’s potential to enhance both psychological and physiological function.

Through direct relationships with independent, adventurous farmers in less-explored regions, particularly across Southeast Asia, we seek coffees that embody curiosity and experimentation.

Precise thermal control is used to prevent harmful compounds produced by dark roasting, while maximizing the preservation of Chlorogenic Acid (CGA), the coffee’s potent antioxidant.

The resulting flavors are surprising, sometimes strange, always distinct.

Why are the beans stored in pharmaceutical-grade amber glass jars?

Coffee rapidly loses aromatic compounds when exposed to oxygen and light. Our beans are stored in pharmaceutical-grade amber glass jars, protecting them from both while preserving aroma and freshness.

Why are most ORGANUM coffees from Southeast Asia?

We focus on less-explored regions such as Thailand, Myanmar and Indonesia, where small independent farmers are experimenting with fermentation and processing methods rarely seen in traditional coffee regions.

Do you visit the farms you work with?

We regulary travel to meet the farmers we collaborate with, taste their coffees at origin and try to better understand their processing experiments. These relationships allow us to select unusual lots directly.

What makes these coffees unusual?

Many ORGANUM coffees undergo experimental processes such as extended fermentation or unique types of anaerobic processing, creating flavor profiles that can feel unfamiliar. 

Why roast lightly?

Light roasts preserve higher levels of chlorogenic acids (CGA), coffee’s key antioxidants linked to metabolic support. This aligns with our optimized living philosophy, enhancing both taste and function.

Can I brew ORGANUM for different methods beyond filter?  

Absolutely. Our coffees can perform beautifully across gravitational, pressure, cold brew, your experimental method etc.

How should I store ORGANUM coffee for maximum freshness?  

Keep jars in a cool, dark place (preferably in a refrigerator) to block oxygen and UV light, which degrade aromas via oxidation.
